Good question, it is possible to create forests, lakes and minimize the amount of desert. But I think you also want more European buildings and other stuff like Wild Boar etc.

Modding is difficult because a lot is hidden in the exe-file. But graphic artists may be able to do it. In this community modding is non-existing in fact. I was used to the Close Combat community, they mod everything in the game, really everything.
