Will Workshops still stay published if I uninstall TWTM?

I just wanted to know if my published workshops will still stay published if I uninstall the game?

And in the steamapps/common/thinkingwithtimemachine folder. If I copied the folder. Will it also copy the Workshops or where exactly is the Workshops stored for this game?

Sure. Published workshop maps are saved in the Steam Cloud, so no matter, whether you have TWTM installed or not.

Also, aside from Portal 2, puzzle 'sources' (.p2c files) are saved in the Steam Cloud too, so even after complete Steam reinstall (or removal of 'steamapps/common/thinking with time machine' folder) you will be able to edit/update your chambers, no need to backup .p2c's.
(Unless you are don't have Steam Cloud sync disabled)
