PoP just has more factions/lords so there are more to congregate on you when the founded-a-kingdom gangbang starts
Yes. That's way early for native, even. Obviously you can rush a lot in native because not that many lords actually field decent cav but in PoP everyone has heavycav so you should either cheese with allied wandering bandits (noldor, snakethots, whatever) or take the conservative option which is something like 90+ honor, 30+ RtR, ~120+ days in (at least four war cycles which you should be aggravating as a vassal, essentially so that everyone hates their king due to territory churn) which'll allow you to steal some lords as your own vassals and hence tip numbers more in your favor.
How do you deal with an army of 3000 fallen idiots?
The PoP doomstacks are hilarious and pointless chores but you can basically just ignore them since they aren't exempt from all the things that make such doomstacks unable to catch up to a player and they'll take gradual attrition from bumping into lords and the like. The actual 3000 stack itself isn't dangerous, it's the ~13 touhou mod tier overpowered demons and 250 heavycav that are the problem.
If you don't mind a bit of cheese you can defang the doomstacks in a multistep process: by waiting till they bump with a decent sized neutral/allied group, joining and telling any non-companion owned troops to leave, kill the demons (who are top-of-the-stack and so always spawn, and are very very fast so always get to combat early) while they're buried in the patsy allied lord's troops, then bail by either retreating or losing the fight and choosing 'leave' when it lets you choose to go again. After that the fallen are just a regular PoP group of 200-300 heavycav with a pool of pointless chaff to spike battle advantage in their favor. They'll just wear down from attrition fighting npcs like any other bandit superstack in the mod since they have no replenishment and then once they're down to a manageable size you can just kill them like any other lord in the mod. Unique bandit lords don't respawn if you tell them to ♥♥♥♥ off so you only need to do this like 2-3 times in the mod anyway.
As an aside, NEVER EVER recruit custom order knights - it costs your permanent renown which means your order knights will be gimped forever. Get the custom order, tell your pre-max-level companions to train their STR/AGI to 30 for free, then press the training button and never recruit any. You recruit order knights by having your kingdom's freespawn 130 stacks lose, turn into prisoners, and then beating their killers to recruit the prisoners for free. This is of course pointless since you'll already be the significantly strongest kingdom by that point.
Something I failed to mention before is that in PoP there's an obvious best place to take your first fief - right outside the noldor/andor(? the snake priestess women, whatever they're called) forest. You can be allied to both of those (bandit) factions and indeed you have to ally noldor to win, and joining them in fights will farm your noldor rep for free. In that spot you'll have both of these factions attacking hostile lords for you and not bumping you or your men, greatly amplifying the effective power of your early kingdom. I guess you already mentioned it, but the leading the enemy 1k stack onto the 800man noldor group is basically a free pass. The noldor superlords respawn if the AI kills them too so it's an entirely renewable resource.
