On your topic anyway, the game is at best relaxing when playing as a small count, more so if you can''t expand due to being a vassal with the law that prohibits internal wars, typically as a vassal of the HRE in the later eras (1200+x), but it can get hectic quite quickly. Revocation attempts by your liege, differnet kind of intrigue/plots against you or when a plague like the black death kills all your remaining dynastic heirs. Apart from that and war CK2 is a sins simulator.
I'd honestly rather recommend older games for relaxation.
Without war etc, but in a medieval setting, i can only recommend Patrician 2/3 for that and you can even turn off piracy, just building your trading empire in a medieval setting in northern Europe. Maybe Stronghold to a degree.
