I deliberately didn't implement an option for her, for a number of reasons. You're not playing as Chell in workshop chambers, you're a random employee, so she'd have no reason to be there. Since you can pick characters, it'd be incredibly silly if there were two GLaDOSes (one running the facility, one on your portal gun).
