Something like that would be possible, but not at all probable due to the complexity of the interactions between the players and them with the environment & testing elements.
The amount of time it would take to make something like that work 90% of the time would be cost prohibitive. It's highly unlikely any game studio would attempt it. They would have to charge an excessive price for the game to re-coup their costs, let alone make a profit.
You're better off playing community made Co-op maps, as they're doing all the work for free.
As for running out of maps to play, there are over 156,000 coop maps. Even if you only play the best of the 5 and 4 star maps, that's still quite a few 1000. Since at least 2 new coop maps get made every week, by the time you get thru all the old ones, and some of the oldest ones are the best, you'll have all the new ones to play.
And who knows, maybe by then you and your friend will be making your own coop maps, and become masters at it. After all, practice makes perfect, and after playing all those maps you should have every move known in your arsenal of map maneuvers.
