Some useful data from here:
http://www.gcinema.net/forums/index.php?/topic/1100-i-just-got-goat-simulator-unfortunately-not-a-single-mlp-mod-is-available/
The game is made on the Unreal 3 engine (probably UDK). There may be some MLP mods out there for other UE3/UDK games that somebody could port over to Goat Simulator.
Someone has Unreal 3 model:

Unreal 4 engine:

And some info here:
http://mlpforums.com/topic/20694-unreal-development-kit-udk/
And nothing more... Looks like not many Unreal DK people are fans of MLP. Or not many MLP fans go for UDK.
Solution:
Evil: Pester those who made some models for Unreal 3 engine
or
Good: Ask/comission a model from those who make models/mods for Goat Simulator.
