That particular image is generated whenever you save the game, and is basically a screenshot of what you can see at that time.

What you'll need to do is load the world up, get a nice view on screen, save manually, then exit without saving.

Then to update the picture on the workshop you just need to publish the world again. (don't worry, it will just update the existing workshop item.)
