After you subscribe to the workshop item you need to go into your zoo. When you have opened your zoo go to the blueprints tab and on the side of the blueprints menu there should be a steam workshop option. Click on that and scroll to find your subscribed item, then select and you can place it where you would like. (Make sure you have blueprints on and have reloaded your Planet Zoo after subscribing to the item.) Hope this helps!
