Your ship cannot carry a massive chunk of stone. Game won't allow it. If its floating stone, you can't lock onto it and it will despawn on its own after a bit. If its static then you can build on it, but then you will have a ship that won't move.
Asteroid still going to despawn after a bit. You could use sensors or cameras to detect its position shift and adjust gravity accordingly using a script. Setting it up will take quite a while, and its still likely going to get out of control.
