Start from there. You can get to that page from the main workshop page by clicking Browse > Collection. You should be able to see a create collection button on the right. You will need an image to act as a thumbnail. Steam won't let you create a collection without one. Once you've done that, you will be at a page where you have Add / Edit Child Items. Right under that, you will have Select items to put in your collection. Go to the third tab. That list is automatically populated with everything you have subscribed.
The main problem is that every time you click to add an asset, the workshop will try to refresh the page, but as long as you keep clicking, you can keep going. Also, it's possible to edit, at least temporarily, the height of that window to make it easier to work.
