I could be wrong here, or maybe you're limited by the engine?
The eyelids are closed by default due to a limitation with the Source Engine, if they were done the other way around the eyelid vertices would weld together and the lighting would be FLAT. So just learn to use the Face Poser already, m'kay?
If there's a "/" for separating characters, then they will be alternate skins of the original model. So Super Sonic's alternate skins (open up the context menu, right-click the model and change the skin #) are for Hyper and Dark Sonic, to save on file size (no need to make separate models when the texture's the only thing different!).
And if anyone complains about how derpy they look, think of how impossible it was for the older Sonic models to look left/right. You should thank us for making 'em like that.
