We're on the same server and I can confirm that we cannot put the saddles on tamed griffins.

Will look into it, could you do me a favor in the meantime and try using the saddle on a newly tamed King Griffin to see if that works? =)
If that doesn't work, you could manually copy the mod folder (Server\ark\ShooterGame\Content\Mods\1086678105) as well as the 1086678105.mod file from your Ark game folder to your Ark server and place them in the same folder (\ShooterGame\Content\Mods\). Finally add the mod id to the "start" file (Server\ark\) or the GameUserSettings.ini seperated by a comma in the line "ActiveMods=..." (e.g. ActiveMods=111111111,222222222,1086678105"
Edit: just open the files with a normal text editor (custom windows text editor is sufficient)
