i play the easiest mode to simply relax and see all the features, but thats almost imposiible to have that when your the rebellion at tech 2 to 3, when i play as rebellion, i always have to worry about fleets that have like 10+ star destroyers while my biggest fleet just got home one and new assault frigates. the ai on easiest difficulty should not have a bellator in its fleet or piett, thrawn, and the arc hammer with 3 other star destroyers together, like 1 star destroyer should be enough for a fleet when played by an ai on the easiest difficulty.

I've also found this problem, the AI seems to gain credits and use them at a rediculous rate, no matter what side you're on. Also, Star Destroyers can be built by the Empire from tech 1, so the mod creators need to either make them more expensive or remove them (I would prefere the first option). This mod has some brilliant features but they need to be fixed.

After looking in the game files, I've discovered from one of the campaign files that the enemy teams all get 98000 credits while you get 12000. This may not be true though.

Also, another reason appears to be the Difficultyadjustments.xml file, the easy AI has 2x the amount of credits as you (daily profit), the medium AI has 10x and hard has 15x. If you want to change this go to this directory:

C:\Program Files (x86)\Steam\steamapps\workshop\content\32470\1125764259\Data\Xml
then scroll down to the Difficultyadjustments.xml file and edit it as you please, this should help.
