Dragons for the most part are just mobile turrets, you can easily wipe a whole unit(s) of elite infantry or cav with a well placed shot, same goes for anything that has a breath ability really. I know there's some nuance with the damage profiles of the different breathe attacks and some are better in different situations but for the most part they disintegrate anything you point them at that's not single target. Outside of that they're mostly just a support monster you can drop in with your cav or on infantry lines you've merged with to help break them.
Star dragon is the only dragon I'd consider a big threat outside of a breath ability since they can fight and win against even royal pegasus knights which is pretty much the premiere anti airforce unit in all SFO. Well assuming it can catch me anyway, and i don't charge cycle :D.
But to answer your question yeah they still fly pretty slow, i'd be horrified if they flew any faster tbh.
