Before moving your ship, go to the elevator rotor base block in the control panel, and click the "Reset Cabin" button. This removes the cabin from the elevator. Repeat for all elevators in the ship. After moving your ship, go to each elevator rotor base block in the control panel, and click the "Add Rotor Head" button. This will restore the elevator cabin.
I have not been able to find any way to make this process automatic. Maybe it could be scripted in a programming block, based on whether the ship is moving or not?
