Difficulty settings

Hi,
I was looking for some advice on the right difficulty settings to use. Is there an in game setting you can change as you go through your campaign or is it only selected at the start of a campaign ?
Would you recommend hard for a some what experienced total war player ?

Any help is much appreciated
