Expanding is okay, but don't overdo it. The catholic faction would call crusade on you, so you might want to focus on defending Cairo until the Crusade time limit is up.
Iron / Silver Mines are good way to boost economy, combine that with civic building that increase industrial income. Might want to focus on civil research and building library in every province as well to speed up those research
