How the hack do I down mechanoids?
Title. I've faced 5 or 6 now, of all types, some melee, some ranged, and all died upon being downed. How do I down them?!

Just have some luck. Later in the game you'll face plenty of them, and you'll get more than enough downed mechs. The chances are also configurable in the mod options, but with the defaults you'll get them quickly enough. The down chances are 25 to 50 percent depending on how they are damaged (see the mod options). 5 to 6 is really not that much: of you roll a dice 6 times, the chance you won't roll a high number is pretty big.

Also, you could install the Targeting modes mod and use that to aim for their legs. This should greatly up the chance in a immersive way.
