You have to plant and grow the fungus. Most of the time, you get crops that serves as food. But sometimes, a greenskin pops out: a squig, snotling, grot or orc. If you go in mod options, you can chance the chances of any of those appearing.
It's an age thing, the older they get the bigger they get. I think they hit warboss size at age 70. Thing is though, the more orks fight the faster they age, so the quickest way to get warboss sized orks is to get into fights constantly.
