Give a fief to another lord as emperor

How can I give a fief to another lord as an emperor of Rome?
Basically I conquer more than one castle as emperor, but when my companion asks my which lord i will give it to and select one, i just start to plunder the castle, then i just keep it and can't give the fief to another lord.
