Report a translation problem
Look for "Counter-Strike: Source" in the list. If it's highlighted (it has a checkbox on the left side instead of an "X" icon), click on the checkbox to mount the game. From there, you should be able to play in the CS:S maps from the map selection menu, and access props and textures from that game.
I want to reiterate that I'm only guessing that the knife is invisible because you're missing CS:S and is not a definite fix for your issue. Let me know if it works!
Before I begin this next reply in earnest, I want to quickly point out that I am no expert when it comes to LUA programming, how Garry's Mod addons are created, or how they operate. What knowledge I am sharing with you here is based on what little information I have been able to gather in my time playing Garry's Mod and comes primarily from troubleshooting issues with other addons. With that being said...
I managed to access the file directory of this addon and had a look around. From what I could see and make sense of, there seems to be no trace of the knife's model files whatsoever, which would explain why it's not appearing in-game - no model files, no model. I have one or two good ideas as to why this would be the case, but no definite answers for you.
Taking a look at the LUA code, I can't seem to find any mention of a knife model either. I believe I've found a section of the code that tells the Afton model to thrust the knife forward, as you can see him doing in-game, but if there's no knife model to accompany that part of the code, it just makes Afton look like he's aggressively reaching for a doorknob instead.
The best advice I can give you at this point is to either try getting in touch with the addon creator, or failing that, look for a different addon that gives you what you're looking for. If there's any other questions you have for me, I'll answer when I can.

UPDATE: Okay, so apparently I'm blind. While I don't have the answer you're hoping for, I did notice that the addon's images for Afton are also missing his knife. So, there never really was any knife to begin with. This feels less like Five Nights at Freddy's and more like Scooby-Doo.
