Erestrum is found on planets in the outer solar system, and Zascosium is found in the inner solar system closer to the sun. Sometimes you can find smaller deposits in other places though.
This is intended to help slow down the pace of progression and reward exploration. The scenario usually generates about 80 planets, so you still have a lot of places to unlock. There's a lot of zascosium and erestrum available in the solar system but it will take time to find them because these are end game ores. Unlike the default game where you can find both ores in just a couple of warp jumps.
