I also recommend making more 40's-50's french weapons, since there isn't that many of them on the workshop
A good alternative for the mat-49 would be MAS-49

From French weapons lebel 1886 is most common in WW1 and WW2.

Will probably stay within the WW1 era for the near foreseeable future, Cold War doesn't really interest me that much

you can make a stg44 with the 3x sight. There are only stgs on the workshop with stock sights and you could take inspiration from bfv.
