The Flandre Trinkets appeared 3 times on week 4, but I haven't been able to reproduce it, even while moving the week forward continuously by saccing random heroes. (Currently kicking myself for not preserving that save, or recording what quests they appeared on. But I shouldn't have been getting very rare trinkets at that point, so who knows...)
I WAS able to get the maid_flandre_food trinket to appear in the Nomad Wagon, however. It causes the game to crash when I open the Nomad Wagon. But I can look in a save editor and see it.

I've modded my game with Nexus Vortex, btw. But I don't think that should make a difference.
The only files that are being overwritten are
/localization/missing_files.txt
/trinkets/crimson_court.rarities.trinkets.json
/trinkets/east_town.rarities.trinkets.json
/trinkets/com.rarities.trinkets.json
None of these should be causing an issue though. But I put the Maid as overwriting all of these anyway, and the maid_flandre_food trinket still appeared in the nomad wagon.
Interestingly, it happened when I upgraded the nomad wagon all the way to max (Or, rather, one level below because I didn't want to accidentally trigger the achievement), and then progressed 1 week. But that could just be coincidence.

That said, I don't even know why the Flandre Food trinket would appear on the nomad wagon because the nomad wagon isn't set up to make pet trinkets spawn
From the nomad_wagon.building.json (I'm using better Nomad Wagon, so it's a little different from vanilla, but that shouldn't make a difference)

I'll keep you posted on what else I can find out, though unfortunately I'm not really a modder, so I'm kind of over my depth here.
We can rule out another mod overwriting the pet rarities based on mod order not mattering. Though, what I'm finding difficult is recreating the crash myself. So far I have been running the game with just Maid and better nomad wagon. Which has the mod running as intended, no crash from the pet trinkets and they hadn't shown up as rewards from dungeons.
Could you tell me what other class mods or trinket related mods you're running, if any?
Also you had mentioned nexus vortex, both the nexus and steam version of Maid are the same version so that isn't the issue. Just wondering if you're running a pre-circus version of DD. No idea if that matters either, but it would help in emulating your set up for debugging.
Over on the nexus someone else had this issue too, they did find a temporary fix in changing the rarity of the pet trinkets away from their pet-status to something else. If sunward works, I'd recommend that rarity in the meantime just so it's at least playable for you.
I accidentally deleted my save (Not related to your mod, just a game breaking bug in my brain) and then took a prolonged break from the game after drama happened.
When I tested the Maid class just by itself, without any other mods, it would still crash if I tried to open the Trinket Wagon while it was selling the pet Trinket.
I think it might have something to do with the fact that I mod the game through Vortex.
Courtyard Plus has the same problem, where it won't work when being installed through Vortex for some reason.
Will do more testing on my end at a later date. Just thought I should update you on what happened since it's been a while.
I have more reasons to believe this might have been the culprit, but no one wants to read that.
