Problem With Dark Ages
Alright, I feel like making the Dark Ages be a scenario that is exclusively Vampires vs Humans seems like an oversight. This is because some characters in the game (especially the Baali in particular) have abilities which are completely useless because they require access to splats which do not exist in this campaign.

Abilities such as Infernalism and Demonic Investments. These abilities require you to either bind a demon, or become enslaved to one in order to develop and make use of them. But since Demons are not present in this campaign, that becomes impossible.

Likewise, creating the Camarilla / Sabbat, and choosing which supernatural creatures to legalize, shun or criminalize is pointless, because none of those exist.

The only idea I have for how to fix this, is to start up a bunch of custom rulers and make them the missing splats, before finally switching back to one of the pre-made vampires. But I'm not sure how that would match up with the proper timeline?

My guess is that the Dak Ages campaign setting is older than the updates that made werewolves, demons, fae etc. playable. Also, the vamps against other vamps focus is in line with most dark ages source material. Vamps are by far the most popular splat in pen and paper.
Still, now that the other supernatural have been fleshed out it is kind of wasteful not to add them.

Several reasons.
1. It is known that players overwhelmingly play the leftmost bookmark for their first game in a new paradox game/mod. Vampires are by far the most polished and feature complete part of the mod. We thus make sure to make a good impression on first time players.
2. Vampires have enough Dark Ages lore to warrant a separate bookmark, their stories are also very self centered, which isn't the case for other splats that need their enemies (like hunters) or corruption targets (demons)
3. The "battle royale" bookmarks are messier, it is especially visible in the fae one where you have patchworks of various splats everywhere. The "regional theme/cohésion" is lost, like Mithras is the top dog of the vampire bookmark, while he is just another mid sized player in the british isles in the fae one. Some players prefer this more coheisve experience.

Well, I tested my theory by making a custom demon and putting him in charge of Rome.

Tried to switch over to a vampire afterward and go on a journey to master Demonology, only for the option to still be blurred out. With the game telling me that the Demon splat didn't exist in that campaign.

So I guess any infernalists will never get to acquire Demonic Investments in Dark Ages.

Also, this begs the question of how they even managed to become Infernalists in the first place, if there were no demons to make pacts with?
