It explicitly states in one of the loading screen tips that you can not diablerize Caine.
It works, but it's not guaranteed you'll get their disciplines. There is a CHANCE that you'll gain access to them. I've diablerized antedeluvians several times, and it seems random between if I received 3 disciplines, just 1 discipline, or even no discipline at all.
However, even if you don't get lucky with the RNG, lowering your generation through Diablerie can still let you access higher level powers of the disciplines you already have.
If you snack some random loser from your dungeon then you probably won´t get anything. Every clan discipline of your victim that you do not already have might be learned by you with like a 1% probability. You do not even get points in it. However, drinking kindred gives you a lot of resonance. You also get good resonance from just drinking them dry as an execution method.
The 3gens vary quite a lot. Seth, f.e. gives you the first tree of Serpentis maxed out. If you already have that then you wasted a lot of blood XP.
Have a look into the Journeys & Coteries :-)
