Edit: I got the idea and then had a brain fart in the actual writing of and forgot to add the important word of economic in.
an Assassin's Guild (to improve assassinations)
a Mason's Guild (for improved build time... make it a Freemason's Guild for improved spy networks... :) lol)
Churchy types of schools (Parochial, perhaps?) to lower unrest AND improve conversion %... an improvement to the University might also be tapped for such things)
a Forger (for improved Chancellor forgeries)
a Sherrif (to improve arrest and lower unrest)
an Apothecary (or Healer, or Doctor, to improve health)
a Brothel (to improve relations and lower unrest)
...and perhaps a series of Dungeon improvements... which lower tax revenue and increase unrest, but improve conversion % and bring up blind and castrate (I'm not keen on getting these for free from a mod, nor am I keen on loading TOO many mods... more chance for conflict)
Perhaps some of the more 'evil' kinds of improvements also lower piety. Sucks to inherit such a thing, but them's the breaks, right? Or is there a way to make an improvement go away when the ruler changes (not a complete change, like when the capitol changes, but perhaps attach an improvement to the current ruler)?.
I'm sure I'll come up with more as I go :)

On topic:
1) More culture focused buildings (non military) for all holding types? Giving minor bonuses
2) Maybe a one or two new buildings for trade Posts? They always feel under loved.
2a) Maybe a culture based building for trade post depending on the culture (indivigual or group) a trade post is built in?
Even if you don't follow up on these ideas. You sir, are doing a splended job and i cannot play CK2 without this mod. I'm aware, with SO many cultures in CK that No.1 & No.2a may be difficult to achieve.
And yeah, the trade posts really deserve more love.
