This can be due to various reasons.
Is the storage possibly too small? The (large) stations have a large output.
Do you use other mods? If yes: a list of them would be very helpful.
Does this happen only with the mineral mining stations? With all of them or only with a specific one?
Maybe a screenshot, a debuglog[www.egosoft.com] and/or your savegame could be helpful.

Thank you so very much! It was that the storage was too small. I had 6 large solid storage on this station, but it looks like that is not enough, add three more to test and it started working. So I am thinking that I under estimated the needed storage. The only one I had issues with was the Ore, Ice, Silicon and Nividium mining modules but since I had them on one station looks like the the minimum large storage was 9 for it to be enough. I will have to see about learning how these and the game storage levels work. Since these were showing Ore and Silicon at 2 mill / hr and the Ice 600k /hr and the Nividum at 120 k/ hr I was thinking that 6 mill for the solid storage should be enough. Again thank you very much for helping me out with this. I am sorry I didn't just try adding more storage at first. And thanks again for the great Mod.

You can set the storage maximum of each ware in the logical overview with deselecting the "automatic storage allocation". Maybe this helps too.
