@JB, pesquisando na Oficina encontrei 02 mods que acredito atender sua necessidade, ambos estão atualizados e funcionando na versão 3.0.2 em 16 de Setembro de 2022 (realizei os testes), o nome deles são:

@JB, o mod "Stacksize Plus v1.8.0 (DLC compatible)" permite aumentar até 100 vezes à mais por slot padrão.
O minério de ferro por exemplo o padrão é 1.000 por slot, com o mod poderá alcançar o valor de 100.000 minério de ferro por slot.
A carne humana o padrão é 50 por slot, com o mod poderá alcançar o valor de 5.000 carne humana em apenas 01 slot conforme você descreve acima.
Eu coloco 01 baú em cada item de fabricação e me atendem.
Juntando com o outro mod que altera o peso colocando apenas 01 ponto no atributo "Expertise" já permite você carregar muita carga de peso.
Sinceramente, não acho necessário criar um novo mod para substituir o "100k Stack Mod".
Espero que entenda meu ponto de vista.

unable to load game on server since update. Any ideas how to resolve this please?

I've just tested it with my mods on my server and also in Single Player mode and everything is working normally.
Could you give more details about what's going on?
- What message appears?
- Is your server and the game up to date?
- Do you have the mod updated on your server and in your game?
- Have you only tested with this mod?
- If you have other mods on your server that are out of date, they may be causing the problem of the server not opening. If so, I suggest making a backup of the current save, keeping it in a safe place, removing the outdated mods from the server, trying to start the server and logging in. If it works, identify the mod that is causing the server to close, for this a good practice is to gradually add the outdated mods to your server, after identifying the mod I suggest informing the creator of the occurrence and waiting for correction.
Also, it's very important to back up your current save so that you don't lose progress in the game and return to the same point before these occurrences.
