Okay so, if a card stops a creature from being able to "attack", does that include the ability to dish out damage to a creature when defending? It's not 100% clear imo

No, it doesnt include the ability to dish out damage. If a creature is flooped or not able to attack it only means that they cant attack themselves. If another creature attacks them they still deal damage.
Only if a card decreases the attack value of the defender he does not deal damage.

Is there a rulebook available anywhere by chance to learn how to play?

Yes. In Tabletop Simulator itself there is a "Rules" Tab where you can read everything.

In theroy, yes. You would have to improvise with the boards and hand zones though. I havent gotten around to doing a 2v2 version yet. And if you dont know the rules you would have to look those up too.
I will look into making a 2v2 version in the future.

very interested with building a deck, what are the rules with card types and landscapes, if any?

You can find the rules in the 'notes' tab.
For deckbuilding there's a separate mod I made. You can find it in the description, or my profile.
When building a deck you just have to remember that to play a creature of cost 2 (for example) you need at least 2 landscapes of its type. Meaning that if your deck has 4 different landscapes, you can only play creatures that cost 1.
When it comes to deck size there's no official limit, although 40-60 is recommended.
Standard is 40 (as in the character decks).

When a card is floop do you unfloop it at the start of your next turn or does it just attack like normal?

You unfloop at the start of your next turn, yes. You can read the rules in the Notebook Tab. Turn sequence is also explained on the board itself.
