Serfs is more appropriate for the Medieval settings and not Slaves.
Honestly is the moral impact: I am against using of slavery of all forms and even more as "entertainment" and again for role-playing as a medieval lord.
It is just a name change?
Or can be made a bit more complicated with some cultures, Empire and Eastern, using slaves while the Western and Northern using serfs.
And that's about it...
just have Serfs/Slaves
so the player can role play as they wish
however if it's to have a more technical application, then you want to be specific, as they are different
but you could have both

Slaves becoming an optional ressource that is being used up to develop land(lower development costs depending on amount of slaves used) and serfs working the fields and increasing productivity.
