You may have a separate mod not affiliated with the furry line of mods (Anthro Survivors, Scalies, and my customs) that is causing that issue. There is only one result from my testing that has come up with the game crashing and that is from tabbing out when the game is loading for the first time or when loading into a world, save, or online server.
When exactly does your game begin to crash?
You may have another mod conflicting and causing your game to crash. My next recommended course of action is to unsubscribe from all mods in your workshop and then re subscribe with just my mod and the original Anthro Survivors. If the game works with just those two running, you may have another mod that is causing conflicts.
Afterwards I would recommend re-validating and or reinstalling your Project Zomboid.
These models are tailor made to the commissioner's desires, not the public's.

First question as I'll always ask is if you're using mod clothing, as mod clothing has UVs that differ from vanilla. If not and its all vanilla, please keep taking off one item at a time until the character is completely nude and see which piece of clothing is causing the face to go missing. The other test case I could ask for is if this error also occurs with other models in the same category (xJackals)
If you let me know that information I can then go further into taking a look at what went wrong.
Is it really necessary to have a massive chain of .end bones and up to 254 identical animations embedded in the fbx? Seems extremely excessive considering many have no animation data at all.
So is it necessary? Probably not, but a lot of these models have a lot of unique designs. The bones are no different than the ones in vanilla and if you open up the male and female models you will see the same thing. That I have no control over as that's whats needed in game. How to remove the animations? Beyond me, sorry its not to your standards.
The mod seems to load and register fine on a singleplayer save though, so im really confused as to why it has stopped working on my localhost
Allthough, I could just be missing something and being incredibly stupid which is also possible haha
Hey Thunder, yeah I had to reupload the mod after trying recently on stream and learning that it didn't work. You may need to start a new wipe if the issue persists after attempting another reinstall
So I have tried to wipe the server, make an entirely new config with the same mods and a config with just Anthro Survivors and this mod and none of the characters you have done appear in the drop down in character creation.
I've tried unsubbing and clearing the workshop file too but im still having the same issue
I really apologise If im sounding a bit rude, I dont mean it im really bad with words :(
so thats the fun thing, im using the "Host" button on Zomboid, just hosting it on my own machine since host's are kinda expensive haha, I've checked the config file and also in the "workshop" and "Mods" section both your mod and Anthro Survivors as the base is listed there, I tried a wipe of the most recent server config I made, and also made a new config and its still not playing ball strangely
