Is there any way to just have the default hireling?
Without origins, two skills focus and unique corpus, like just plains vanilla hireling (aint talking about the limitless heli and level tho)

Like a config or something?

If you want to look for just plain, vanilla Hirelings, there's not really much of a way to do that at the moment, but I can create an addon for it in the future if you wish. For now, Noob Hirelings function practically the same way.
