Organs are indeed a rare resource, as plot wise the Galactican Empire has told your colony to research the fauna and send the research (And power the organs unlock) to the Galactican Empire!
Game mechanics, they do have quick spoil times and can only be stored in PX-Stockpiles or the Laboratory Fridge.
I will add to the to-do list a research that unlocks a mini-fridge sized building with larger organ storage.
And increase organ stack size, so you can store more in the "default" lab fridge
As far as how to start stockpiling them, the attacks and tames can be a good source. But like you said, do not cover some of the more expensive research.

Might I recommend glancing in the dissectory?
An aspiring Biologist can do experiments on organs and some other resources players tend to hoard, and may discover something that can help you make as many organs as you have time to.

Step 1. There are some recipes in the dissectory with a high chance of failure.
1a. On success will unlock a new "atomic" resource (Zancer Mutations)
2. Once Zancer is found a new "organ swap" research will unlock, letting you:
2a. Convert organs into other organs.
2b. Turn organs into that Zancer.
2c. Spend the Zancer to generate a LARGE amount of organs.

You can make as many Zancer/organs as you want via looping 2b and 2d.
Collect enough organs and turn them into Zancer, now you have 15
Then make 24 organs from Mass Evolution recipe.
Turn the 24 organs into 48 Zancer.
Take 15 of it to do the Mass Evolution Recipe; 33 Zancer gains
Repeat until you feel you've made enough profit
May I ask another thing: is there any vengeance from galactic authority if i do not send anything (honesty, even if i would wish it, i do not know what to do !) ? Maybe robots attacks ? or humans ?
This mod is awesome, i burnt every three scenarios from base game and that X Project is at large scope

That being said, I'm actively planning/designing the attacks & story of:
- the Galactican Empire via PX-003 and the Colonization Committee
- The Black Market / Rebels via other (official or illegal) settlements you can hot air baloon too
- A few other minor factions (Taming Guild, Bounty Hunters, etc...) that interact with the player via "announcements" or "events"
What I will make sure of regardless of content:
1. All "faction interactions/plot" will need to opted into via a new game option
(Selected on new game menu)
1a. This is to preserve the current sandbox / no goals gameplay loop.
2. Each faction added will come with a tutorial notification explaining how to:
- Hurt or Help the colonies relationship with said faction
- Check your standing with them
- A high tier reward (item/recipe/mechanic) that allying with this faction will grant you
(One of a few rewards a faction will give, but usually the selling point of the faction)
- What will start to happen if the colony continues to antagonize the faction.
I have intentionally hidden a few 3d models and equipment icons that you can find in the original PX mod for the above purposes.
Otherwise my lack of 3d modeling / art skills would make the visuals be a re-skin bonanza.
This is.... not a small task, so it may take a few months based on my current time / attention / energy.
If I was a better dev, less bugs would be let through that required my attention & time.

I'm currently working on a large content update in the underlying Insects Level Up mod, but I will try and find time to push a hotfix if my testing shows degradation

I am not able to do any advanced research as organs decayed faster than I collect them by hunting ^^
I did not see that in my test save.
I had powered and built the large biology lab.

ah ah ah ! Just for your sanity , I will tell you: yes, it is !
But... the name is laboratory FRIDGE, not freezer. I can't find any freezer for organs. Maybe this is the issue.
