Each unit has a basic cap, this is how many you get to recruit after unlocking bonuses with buildings. You can then upgrade that building or build more of that type of building to stack the bonus to unit cap.
Building the "Outpost" unit building chain gives more of a bonus to unit cap than the Dojo. The Garrison unit chain subtracts ashigaru and samurai from your unit cap but provides them as garrison units.
Unit caps are generally either Ashigaru (Kumi and Ashigaru units) or Samurai. There are also more specific caps for Sword Samurai or Bow Samurai. To my knowledge, these caps all work together and you can imagine it like having "slots" for each unit type. IE: +1 Samurai adds to a Samurai pool, which can be occupied by any Samurai. +1 Bow Samurai can only be occupied by a Yumi Samurai unit.
Fun note: I have no idea what Christians!!! means. Moneyship means Trade ships, but Christians from the Nanban port I think relates to the Tercos unit that the Japanese can recruit in vanilla. Since that unit doesnt exist (at this moment, v1.38), the Christians cap bonus is not really used.
