Locked doors, you can steal a key from a manager to open them (make them unpicklockable or hardest lock).

Add staff, patrols and hard locked doors in it, then will it be a very nice mod :)

perhaps make it more "Thief" like (adding armed npcs in and outside to guard it, dogs to alert the npcs, and mercinaries to guard the biggest haul).

Yeah, noticed that, shame, I loved the unicorn in Oblivion. And yeah it's not gonna happen sorry I can't do NPCs at all.
