It's because the new versions of the models have double UV space for front and back license plates seperately now. Looks like your textures didn't update properly.
Unsubscribe, go into your addons folder, delete the .gma file and resubscribe. Should probably fix it.
Can you show an example?
Do you have the drivable or simfphys versions of this addon installed too? I don't believe those ones are updated yet and might be causing asset conflicts.

If you have the Simfphys version of the addon too, try uninstalling it, it hasn't been updated and is still using old materials.
If not, just un-sub and re-sub to this one. Sometimes the game won't actually re-download .gma files for addons when updates are released.
Am i missing something obvious?
Looking at the addon file itself (steam/steamapps/workshop/content/4000/438975885), it seems steam is downloading "car_props_(consumer_pack)_v0.6_438975885.gma" no matter what. (unless the file name is the same for .6 and .7)
