Mot it's not really concerned with the exact topic, indeed.
From things you've mentioned, I'd pick sneaking as the first thing. Hard to implement but very useful. And of course needs detailed work-through, like "will other mobs that didn't see you react when you stealthy kill one of them" etc.
Also I'd suggest to implement some pole vault equipment for longer jumps.
PS My opinion: keep on more realism and less OP stuff. Please choose realism instead of super-hero stuff like levitation :)
They should be able to resist you though. The longer they wait to resist, the longer it should take for them to succeed (Typing, or not expecting it.)
Once they break free of your grip, you can't grab onto them for awhile, depending on how long it took them to break free (Instant-break = A LONG time. Long-break = instant grab again.)
Grabbing from the front makes breaking easier, from the side the grabber get's hurt and knocked during during break, and from the back is most effective.
Breaking free, THEN holding a weapon/tool would make being able to be grabbed take longer.
Someone already holding a weapon/tool may have it snatched out from behind them if they don't instantly-break (Within one/two second(s).)
EDIT: Oh yeah, and you should be able to move with someone you are holding onto. The longer you hold onto them, the faster you can move (Up to almost full speed... but still slower to let their friends catch up to their AFK friend.)
Players should also no be able to talk while being grabbed, unless they are close to breaking free (Whisper Only mod + This = PERFECT COMBO.)
Sneaking would also be useful. Perhaps for players, you would have to take a single step at a time. If they are facing you, and you are not behind an object, you become visible. Otherwise you are completely invisible.
To pickpocket, you would have to be standing behind a non-moving/turning player for ten seconds to take something they have (Or something they are holding if you grab them, ;)), or if they look in a chest, it would take five seconds.
Have you considered something along the lines of Confuse/Distract Action? One use for it could be something like: Using confuse will allow you to remove a creature's agro on you.
Another idea for more actions is Charged Attack, holding the auto attack button(F) or holding a mouseclick of Attack on a creature will hold an attack pose and do increased damage upon release but it will have a long cooldown if you miss your Charged Attack.
Third idea, would be Roll. Rolling away should allow you to dodge any projectile targeted at you. It can also help with kiting Giants, but rolling more than three times in a row will trigger a long cooldown before you can roll again. Anything along those lines.
