Cowboys weren't savages or bandits: they were quite the opposite, really. We use the term cowboy to describe any gun-toting horse-riding man in leather chaps, but the truth is, real cowboys were cow herders that were employed under larger farms.
Outlaws and bandits later became known as cowboys as well because it became a generalized word after the influx of western movies in the 50s and 60s.
Merciless killers like Jesse James weren't actually cowboys, but people like poor old José the cattle herder were cowboys.
