Not meaning to sound offensive or anything, though :)
And honestly I think if every class had it, it would be a heavily abused taunt.
Besides, most of the other classes already have instruments. Sniper has his saxophone taunt (from Expiration Date). Demoman his Scottish bagpipes taunt (and plays the piano in the Expiration Date movie). Pyro strums his axe like an electric guitar and has bongo drums as a cosmetic item. Engineer has his guitar kill taunt when using the Frontier Justice (and plays the guitar, it's canon as seen in Meet the Engineer). Medic seems to know how to play the violin if you go by his Amputator taunt. And the Heavy likes to sing (in several of his voicelines).
Not everything has to be all-class.
