I opened the local files for Postal 2 (right click Postal 2 > Manage > Browse Local Files) and deleted everything in the "Save" folder, I also deleted the entire "WorkshopContent" folder (delete the folder not just everything inside). I verified the games files, right click Postal 2 > Properties > Local Files > Verify Integrity of Game Files). I ran Postal 2 to make sure it was completely unmodded, you'll still be able to see the workshop menu in-game when you select new game which is fine, just check and make sure Nicks Coop isn't there. I quit Postal 2 and resubbed to Nicks Coop and ran Postal 2 again, this time there was no unpacking error.
All that's left is to make a new game and go to workshop and select Nicks Coop which will reset the game. It should all be working from then on hopefully for everyone who has my problem.
Thanks!
