Currently I will try making one random track first, to utilize some new tools I have aquired. When that is done I will likely do one of the dirt tracks :)
What about some WCORR track (car motocross track)?
And big scale dirt oval?
It's a small tarmac/dirt(or mud) track. Have watched quite a few races there in my youth.
Found some resources for you for references.

Adding another track to the wish list.
It's another one from Norway, but this time in the south - closer to where I currently live.
The track is technically called "Rugsland Motorsportsanlegg", but the last part can probably be translated into english to make it more understandable.
It's similar to the one mentioned above, in that it is a small, mixed gravel/tarmac track for around 5-6 cars per heat.
I've found some resources to reference bellow.

Videos:
First person drivethrough of the track

Observers POV, and a whole bunch of spinouts. Not all that well for reference apart from getting the width of the track correct, but it's fun to watch :P

That last channel also has a bunch more videos of races on this track from earlier years. Some on dry dirt, others in rain and mud.
