You can have their focus tree start with them getting out of their economic depression, and have a two tierd industrial tree that chooses either civilian or military funding (as they don't really have the money for both at game start). They can of course have a focus to reassert their claims on the Falklands as well.
You may suggest it on "Countey Suggestion" thread. This thread is pretty much dead I think
probably some anti russia and pro russia focuses in there
Focus To take Back Colonies or something
Note: These are all suggestions so I'm not forcing anyone
South Korea needs the two korea agreement and the one korea as well. S.Korea should have the option to improve relations with N.Korea (stability decreases?) or worsen them (stability increases?).
Also, I think S.Korea should have the option to befriend the USA or Russia, some policy which conflicts with China and Japan, as Koreans don't like ♥♥♥♥ or the Chinese because of history and differences, such as the Dokdo island confilct with S.Korea and Japan. South Korea should have policies to increase the navy even further (samething with Japan) as we're surrounded by the ocean.
A policy that increases production and electronics (from Samsung, LG or other electronics company of Korea). Also, a policy that increases industry and production because S.Korean people are very hardworking (except me) because we barely have any resources (like land, natural resources) but have one of the biggest economies in the world. We went from nothing to this.
S.Korea's politics game is very weak so maybe you can add something that decreases stability or political power, but everytime S.Korea had a bad leader, people protested to kick them out (such as Park Geun-hye) so a policy that can counter the politcal debuff if it is achievable to add a debuff in the first place.
A focus to call the former Catholic countries to give divisions to the Vatican for another crusade
First, a map:

The white outline seem to be the most reasonable one for expanding, as it's essentialy just the Pre-WW2 border + Lithuania, Courland (which was a Polish fief before the Partitions) and Kaliningrad (which was part of Prussia, also a fief of Poland for a time).
The red outline are the borders of the Polish-Lithuanian Commonwealth after the Truce of Deulino (1619-1629), at the peak of the country's territorial expansion. You could also add Estonia to it, if you're feeling generous. Though honestly, the entire red line should be added only if you're feeling very generous.
Pink territory - to be given to either Slovakia or Hungary.
Purple territory - to be given to either Romania or Moldova (apologies for including it in white and red, I'm not the best at drawing).
There should be separate focuses for carving up each neighbouring country.
For Ukraine - A "Danzig or War" style focus which would give its white, purple and pink provinces to Poland. If Ukraine accepts, Poland would get an event ASAP to choose to which of its neighbours Carpathian Ruthenia and Bucovina should go. Perhaps also a later "secure the pro-western Ukraine from Russian aggresion" focus (probably needing a better name), which would grant the red territories to Poland, the one province that I couldn't fit on the map to, again, be given the Bucovina treatment, and the remaining territories to remain for the Russians to be swallowed.
For Belarus - A couple of focuses focusing either on doing something about Poroshenko's dictatorship (you know, the "spreading democracy" excuse) or the Polish minority in Belarus, which would eventually lead to retaking the pre-WW2 borders and perhaps unlocking another "Secure X from the Russians" event to annex the rest of Belarus (or you could just move the "Spread Democracy to Belarus" stuff here to annex it).
For Lithuania, I'd suggest two ways - a peaceful "Rekindle the memories of the Commonwealth" focus tree which would eventually end up uniting the two countries (maybe even with a name change) or a more aggresive focus tree focused around the Polish minority in the Vilnius area and the legacy of Polish culture and history in the area, which would eventually allow you to annex all of Lithuania.
As for Latvia, the best idea would probably be to simply make the focus available after finishing with Lithuania.
For Russia, the whole "Repel the Russian aggresion thing" could be used, or you could make some revanchism-styled "Retake our rightful borders!" focus. Both of them would give a casus belli on Russia either way.
And if you'd need any suggestions for a king in case a Monarchist party somehow wins, I'd suggest Rudiger von Wettin, Alexander von Wettin or one of the disputed heads of the house of Romanov. Reasoning:
Wettins - The Constitution of the 3rd of May stated that if king Stanisław August Poniatowski died without an heir, the Wettins would claim the throne. Also, the last ruler of independent Poland with a monarchic government, Frederick Augustus, Duke of Warsaw, was a Wettin.
Romanovs - Congress Poland, a semi-autonomous state under the Russian Empire, was technically a personal union under the Tsar. Note that this probably would cause more repercussions than the Wettin option.
