Is personally owning the town/castle that has a chapter of a knighthood order the only way of upgrading your units?

Believe so. You gotta talk to your steward and pay the prestige and Gold for it.

Would like to have units from all the various orders , so that is disappointing, but thanks for letting me know.

Just Own mutiple castle with orders and boom, porblem solved. Take and move them around.
