Auto Recruiting and Village Recruiting
Does auto-recruitment replace village recruitment? I have my own kingdom and adjusted to the Pendor culture. But now since I have claim over a previously owned Sarleon castle, and wanted to try to recruit automatically from inside the town through the Steward, I keep getting random Sarleon militia and can no longer recruit from the village nearby for Pendor troops. Am I correct to assume this is why? Can you also turn of auto-recruitment? I can't seem to find the option.

Yes, auto-recruitment uses the same pool of available recruits as manual recruitment.
Even if you selected Pendor culture for yourself, there is a chance to get original faction recruits for given village (Sarleon in your case).
No, you can't switch it of - it will last 30 days.

Yep, I just noticed in the recruitment option it mentions a month. All good now, thank you!
