Each fight has a specific map designed to cater to their size and dynamics. They also have AI that may or may not be specially made for them. It's likely they are driven by AI nodes placed in the map, to direct them where it is safe to go. This is all speculative.
As for attacks, one might get creative and simply create a boss with a different combat style. Ramming the player is impractical in 3D. It's probably better to think up new ranged attacks or tactics they can use.
I haven't looked into this yet, nor will I be able to at the moment. However, if I were to start looking for clues as to how to make a boss in GMod, the HL2 chopper bosses are probably where I would start looking. Highway 17 might be a good test case, as it's very large and open, and has a very simple AI for its attack chopper.
