Key framing
Well im not an expert animator, and if were talking about the professional standard ive berelly learned the 12 principles of animation,however lets just say i i know how to use sfm.With all that said i think i know what youre talking about.
From what i can tell youre asking if you should press m with the whole body selected, or with the bone youre moving selected... Thats like you asking "should i brush my teeth with dirt from left to right or right to left?" it wont make a difference, but the fact youre asking that shows youre making a wayy deeper mistake witch you dont even know about.

First up, keframing the whole body while blocking helps keep things more organized.you can break this rule at the very last stages of blocking, but mostly it helps to keyframe even bones that arent moving.Why you might ask?well ill explain it anyway.
This is the A pose. this is the B pose. This is the C pose.
the right hand has a pose in the A pose, the same pose in the B pose, and a different pose in the C pose. if you dont do a separate keyframe for the B pose, when you spline everything the hand will start moving when it hits the A pose, to the C pose.In case you want the hand to start moving by the B pose, youll need to make a different keyframe for the B pose.

In case i just described the "weird results" you were talking about, thats great.Im assuming youve worked with a different software untill now, and only now came to sfm because you have 200 hours in sfm.thats really low for 2 years.

If.. however youre talking about the animation itself not looking good..Im afraid i cant help you.Youre asking how youre supposed to pose, and i dont think a post on a forum can teach you that.I can however tell you that in most situations no limbs are gonna move alone,without the pelvis/spine moving too, and if the hands are free(not resting on a table for example) the spine cant move without the hands moving too.i suggest locking the chest to both hands if the hands are free.
