Between WU and WO, I have over 4,000 hours played. The devs are working constantly on Wurm Online, trying to make it even better. All those changes eventually come to WU. The game is not grindy at all if you make adjustments to the server settings. I play with 10X skill gain and 10X action. Most skills I can hit level 20 within an hour. That is hardly a grind.
The point behind GUI for example is most of your actions youll bind to keys which is obviously most intuitive way how to control any game.
The inventory is part of immersivity. Youll make it intuitive by containers and dinner tables and so..
In lets say 100 hours in game i would never want to change it into another GUI, because its absolutely essential to manage windows at screen as you currently need.
We could write a book what else is bet in this game, but its irrelevant. Its not game for anybody for sure and the developers are insane (like for example Dwarf Fortress developer is).
