I think sound and collision shouldn't be too hard...
Non-human drivers might be a bit more difficult, I have not worked with simplistic AI beyond a Turn Based Strategy game setting (And a space horror game where all the enemies just walked left/right depending on where you were). BUT If I were attempting to do it in this kind of game I'd probably set various "Goal" posts along the track for AI units to move towards.

I've now added powerups and changed the offscreen driving to a respawn and score reduction.
Next update will probably contain sounds, collision and non-human drivers.
1) When a player drives off screen they end up with 0 points and are just out of the race. I think it'd be best to deduct points and respawn them at the start. It'd make sure nobody is forced to sit around while the other person is playing.
2) Some basic music would fill the void. Nothing grandoise but SOMETHING. Possibly some motor sounds for when you are accelerating and some sound for when you hit grass.
Other gameplay stuff is up to you from there. Some suggestions if you're able...
1) Powerups - Everyone loves to go faster, or shoot a fireball, or whatever. Depends on what vein of racing game you want to go with. Mario Kart/Racing
2) Maybe able to collide with other people. Send them veering off road and such. Lets you be forceful and not just two guys who happen to be playing two cars who can't connect to each other.
